1 cup Old fashioned oats 3/4 cup Quick oats
1/2 cup Almond meal 1/2 cup unbleached flour
3/4 cup Raisins 3/4 cup unsweetened applesauce
1/4 cup Honey 1 large egg beaten
1 tsp. baking powder 1/2 tsp. baking soda
2-3 tbsp. stevia 3/4 tsp. Cinnamon
1 tsp. real vanilla 1 tbsp. oil
* 1/4 tsp. ground Nutmeg
* 1/8 tsp. ground Cloves
* Optional
Preheat oven to 375 degrees. Lightly spray baking sheet with vegetable spray. I prefer an air-type baking sheet. Mix all dry ingredients in a large bowl, mix liquid ingredients separately with hand mixer until frothy. Combine liquid mix with dry and mix by hand just until moistened. Do not overmix!
Using two spoons, place on cookie sheet shaping slightly and allowing 2″ between cookies. Bake for 10 minutes. Cookies should not brown on top. Allow to cool.
Makes about one dozen 2 – 2 1/2″ cookies.
These cookies are chewy and moist with very little fat and sugar, making them a healthy indulgence with today’s emphasis in mind on eating lighter. To your health!
